This bread is a blend of four different kind of heritage grains (Sonora, Yecora Rojo, Spelt, Abruzzi Rye and Einkorn). We source our grains from local farmers who use organic and sustainable methods and practices. All the grains in this bread are freshlly-milled in house with our German imported stone-mill. It ferments with our wild yeast starter for a total of four days slowly building flavor and nutrition.
